Baking for the Hubby

My hubby is always getting upset because I make goodies (cupcakes, cookies, muffins, brownies, etc.) for work, but he never gets any. So to be a good wifey, I decided to make him some breakfast muffins for the week. Since hubby is also trying to be healthy, I went with my healthy version of banana bread muffins. They are made with Whole Wheat Flour and Splenda, but you can always sub in for the not so healthy version. This recipes is actually my own creation based on several different ones I have tried before:

Ingredients

1 c. WW Flour, 1 c. AP Flour

3/4 c. Splenda (or Sugar)

1 tbsp brown sugar

1 tbsp honey

1/2 tsp Baking Soda

2 tsp baking powder

1 tsp cinnamon

1/2 tsp nutmeg

3-4 ripe bananas

1/4 c. fat free milk

1 egg

1tsp vanilla extract

Directions

Preheat oven to 350.

Mash bananas, then add egg, milk, and vanilla.

Mix all dry ingredients in a seperate bowl, then whip together with wet ingredients.

Optional: mix in walnuts, dried berries, or any nut of your choice.

Separate into mini-muffin pan and bake for 18-20 minutes. Makes about 40-50 mini muffins.

Of course I had to taste one for quality control purposes :) They are good, but the “unhealthy” version is so much better!

This is Tillman, our 25 lb. crazy cat. He climbed in the dryer to try to get the treats that are on top of the dryer. He’s such a little piglet!

    Ooh…those muffins look delish! I like how they’re healthy, too! :) Ellie Krieger has some great pumpkin muffins (not sure if you like pumpkin) that I made for my challenge awhile back.
